My mother is not much of a baker. I guess I should re-word that. She doesn't like to bake much. I inherited that from her. But there is one time of year that both my mother and I put on our chef's hats, tie on our aprons, and get baking. And that is during the holidays.
Every year for as long as I remember, my mother has made what she calls "Dolly Madison Cookies" for the holidays. And I proudly carry on that tradition. (Of course, they're great for any time of year...but we only bake at the holidays, remember? LOL!)
Not only are these cookies extraordinarily yummy...they are extraordinarily easy...for the baking-impaired such as myself. My kiddos loooooooove to help make these (although they contain coconut and walnuts which are - as my kids will adamantly tell you - yucky). So, they don't eat them. But I make them as my go-to cookie for holiday parties. And any cookies that happen to be left over get to be enjoyed by me (and occasionally by the hubby if I'm feeling generous.)
Here is the recipe...just as my mom gave it to me...really it's so easy it's almost a sin...
Dolly Madison Cookies
Layer:
Graham Crackers (1 cup crushed) note: I have found that 1 1/2-2 cups works a little better.

1 sq. butter (melted) mix it into the graham crackers and them pat them down to form a "crust."
1 c semi sweet chocolate chips
1 c crushed walnuts
1 c shredded coconut
1 can sweetened condensed milk (pour evenly over top)
Bake at 350 for 10-12 minutes
Let cookies cool thoroughly before cutting into squares (I have found that a pizza cutter works amazingly well for cutting these.)
